Ingredients

Turkey blood

Turkey legs and head

¼ Turkey breast

1 Turkey fat piece

2 Medium chili ancho

1 Liver

1 Gizzard

2 tablespoons of Lard

1 tablespoon of Flour

2 Garlic cloves

2 Green plantains

1 Small onion

1 Clove

1 Large tomato

1 Pepper

1 Cinnamon stick

1 Oregano sprig

1 pinch of Salt

Preparation

Step 1 : The turkey stew is prepared by boiling the blood in water with salt and cutting it into small cubes.

Step 2 : Then, a chili ancho is deseeded, roasted, and soaked in warm water.

Step 3 : The turkey pieces are cooked in enough water.

Step 4 : Next, blend onion, garlic, tomato, and the other chili ancho with a bit of the turkey cooking broth.

Step 5 : This mixture is fried in hot lard and added to the turkey pot along with the blood cubes.

Step 6 : Peel the green plantain and add it to the preparation, boiling until it softens.

Step 7 : Finally, add the remaining aromatic herbs and use flour to thicken the broth.
