Ingredients

½ kilogram of Green tomatoes

300 grams of Cooked pork loin (reserve the broth)

250 grams of Chayotes

250 grams of Green beans

5 Zucchinis

4 Serrano chilies

3 tablespoons of Oil

2 Garlic cloves

1 Cooked pig's foot

1 Cilantro sprig

1 Epazote sprig

1 Piece of onion

1 pinch of Salt

Preparation

Step 1 : To prepare the Tlaxcalan dish, grind the chilies and raw tomatoes together with the garlic and onion.

Step 2 : Then, fry this mixture in hot oil until well seasoned.

Step 3 : Next, add two cups of the meat broth, salt, the meat, and the pig's foot, both cut into pieces.

Step 4 : Bring to a boil and add the ground cilantro and epazote, as well as the previously cooked zucchinis, beans, and chayotes.

Step 5 : Let it simmer one last time and serve.
