15 Tortillas cut into small squares
125 grams of Lard
100 grams of Añejo cheese
3 Poblano chilies
1 ½ Onions
1 cup of Tomato purée
¼ liter of Cream
3 Poblano chilies
1 pinch of Pepper
1 pinch of Salt
Preparation
Step 1 : To prepare runch chilaquiles, start by frying the tortillas in hot lard and then remove them.
Step 2 : In the same lard, fry the ground tomato along with an onion.
Step 3 : Add the roasted chilies, deveined and sliced into strips, seasoning them with salt and pepper.
Step 4 : Then add the pieces of tortilla and let cook until the liquid has reduced.
Step 5 : To finish, add the remaining chopped onion, crumbled cheese, and cream, mixing well before serving.
