Ingredients
2 Large chickens
¼ kilogram of Pumpkin seeds
100 grams of Fresh corn
50 grams of Lard
½ Fresh onion
3 Garlic
2 Pasilla chilies
1 pinch of Pepper
Bay leaves
1 pinch of Salt
Preparation
Step 1 : To prepare the pipián, boil the chickens in water with salt and onion, then cut them into pieces.
Step 2 : Next, toast the corn on a comal.
Step 3 : In a pan with hot lard, fry the pumpkin seeds, pasilla chilies, and garlic.
Step 4 : Once fried, grind them using a metate and then dilute with chicken broth, then strain the mixture.
Step 5 : In a saucepan, heat some lard, then fry the pipián.
Step 6 : Let it simmer over low heat, stirring constantly, and add the chicken pieces to absorb the flavors.
Step 7 : Then season with bay leaves, pepper, and salt.
Step 8 : Separately, reheat a little lard and add it to the pipián stew, then bring to a boil again before serving.
