Ingredients
4 kilograms of Tender kidney with its blood
½ cup of Oil
3 cups of Chicken broth or water
10 Bay leaves
6 Rosemary sprigs
1 cup of Finely chopped onion
20 Finely chopped garlic cloves
20 Large whole garlic cloves
2 cups of Finely chopped tomato
4 Roasted poblano peppers chopped small
2 Very thinly sliced onions
6 Roasted poblano peppers or green peppers or chilecas, seeded and cut into strips
24 Oregano lettuce leaves
24 Flowered radishes
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The kidney is cut into small pieces, reserving the blood.
Step 2 : It is fried in oil with bay leaf and rosemary until golden.
Step 3 : Next, add garlic, onion, tomato, chili, along with a pinch of pepper and a cup of broth or water.
Step 4 : Cover and cook over low heat until the meat is tender.
Step 5 : The blood is dissolved with the remaining broth or water, heated, and strained over the kidney.
Step 6 : Remove the herbs and keep warm.
Step 7 : Let it cook at very low heat until the sauce thickens, adjust salt, and serve very hot on a long plate.
Step 8 : To decorate, use onion, radishes, and some lettuce leaves.
Step 9 : Accompany with tortillas.
