Corn Hominy Soup
Ingredients
½ kilogram of Pork shank
½ kilogram of Pork backbone
½ kilogram of Pork leg or loin
2 liters of Water
24 Fresh corn, kernels removed
5 Green tomatoes
2 Poblano chilis
1 Small garlic head
1 Epazote sprig
1 pinch of Salt
Preparation
Step 1 : To prepare the corn hominy soup, cook the corn kernels in water along with the garlic head, salt, meat in pieces, and the epazote sprig.
Step 2 : Once the kernels are cooked, blend the seeded poblano chili with the tomatoes and add it to the kernels and meat, seasoning with salt to taste.
Step 3 : Then, let the soup boil for twenty minutes.
Step 4 : When serving, you can add cabbage, onion, oregano, radish, and ground chili de árbol with vinegar and lemon to taste.
