Charro Beans
Ingredients
750 grams of Light or pinto beans
200 grams of Boneless pork shoulder with fat
½ Sliced onion
3 Peeled and crushed garlic cloves
18 cups of Water
2 teaspoons of Salt
200 grams of Chopped bacon into thin sticks
200 grams of Finely chopped chorizo
4 Medium-sized roasted and peeled seedless tomatoes
3 Chopped garlic cloves
6 Finely chopped green chilies
1 Large bunch of cilantro
1 pinch of Salt
Preparation
Step 1 : Cut the meat into small cubes and add to the clay pot along with the beans, sliced onion, and crushed garlic to cook everything in water.
Step 2 : After the mixture reaches a boil, reduce heat and let it simmer until the beans are tender (about one to two hours in a clay pot or 30 minutes in a pressure cooker once the valve rises and pressure drops when opened).
Step 3 : Once tender, season with salt and let cook for about 10 more minutes to thicken the broth.
Step 4 : In a separate skillet, fry the bacon, chorizo, tomatoes, chilies, and chopped garlic for about 10 minutes until well seasoned.
Step 5 : Add this mixture to the beans and cook everything together on low heat with a sprig of cilantro for approximately 10 more minutes.
Step 6 : The mixture should have a thick broth, and when serving, garnish with plenty of cilantro leaves.
