Ingredients

½ kilogram of Lamb's liver

½ kilogram of Lamb's lungs

150 grams of Sliced ham

100 grams of Lard or oil

1 tablespoon of Toasted sesame seeds

1 teaspoon of Sugar

¼ cup of Capers

1 ½ liter of Broth

3 Pieces of dried chorizo

16 Olives

2 Garlic

2 Sweet onions

2 Cloves

2 Roasted tomatoes

1 Piece of toasted white bread

Epazote leaves

1 pinch of Pepper

1 pinch of Salt

Preparation

Step 1 : In preparing the chanfaina, first cook the liver and lungs in salted water, then cut into pieces and add the sliced ham.

Step 2 : Next, fry them along with the chorizos; drain the fat and cut the chorizos lengthwise in half.

Step 3 : Then, blend toasted bread, onions, garlic, cloves, roasted tomatoes, toasted sesame seeds, and epazote.

Step 4 : Fry this mixture in the same fat from the meat and add capers, olives, broth, sugar, vinegar, salt, and pepper.

Step 5 : Let it cook over low heat until the meat is well cooked, ensuring the broth thickens.
