Andalusian-style Tripe
Ingredients

3 kilograms of Cleaned and cubed tripe
3 kilograms of Peeled and chopped potatoes
1 kilogram of Chickpeas
1 kilogram of Tomato
½ kilogram of Raw ham, in pieces
½ kilogram of Longaniza sausage, cut into pieces
¼ kilogram of Pork belly, in pieces
8 Large chiles
5 Chorizos, cut into pieces, with their fat
4 Oranges (for juice)
2 Garlic cloves
2 Red onions
2 Sweet chiles
2 Pig's feet, cut into pieces
Oregano
1 pinch of Salt
Preparation
Step 1 : The tripe and feet are soaked in water and orange juice for one hour, then rinsed thoroughly to remove impurities.
Step 2 : In a pot with boiling water, place the tripe, feet, roasted garlic, oregano leaves, and salt over low heat; halfway through cooking, add the chickpeas.
Step 3 : Let it rest for 12 hours.
Step 4 : The next day, re-boil over low heat.
Step 5 : Blend the tomatoes with chiles and onions, then add to the pot with the tripe, allowing the flavors to meld.
Step 6 : Then add the potatoes, ham, pork belly, longaniza, and chorizos.
Step 7 : Once everything is well cooked, remove from heat and serve.
