Ingredients

1 kilogram of Dough

½ kilogram of Cooked chicken and pork

250 grams of Lard

Chinese chili (morita)

Banana leaves

1 pinch of Salt

Preparation

Step 1 : To prepare Xantolo tamales, beat the dough with salt and lard.

Step 2 : Subsequently, soak and grind the chilies (without seeds).

Step 3 : Then, cut the chicken and pork into pieces and add the chili.

Step 4 : Next, pass the banana leaves through the fire, cut them, and spread one by one.

Step 5 : On each leaf, place dough, chili with meat, and roll them up.

Step 6 : Once filled, arrange the tamales on a grill, in a thick claypot with water at the bottom.

Step 7 : Then, cover with banana leaves and cook for forty-five minutes.
