Ingredients
1 Pork offal (full)
1 kilogram of Green tomato
½ kilogram of Rice
½ kilogram of Peeled peanuts
½ kilogram of Peeled chickpeas
½ kilogram of Chopped carrot
1 ½ cup of Chopped cilantro
2 Chopped onions
1 Pinch of oregano
Pork blood
Serrano chili
Aromatic herbs
Pork fats
Vinegar
1 pinch of Salt
Preparation
Step 1 : To prepare the stuffing, carefully wash the offal and let it soak overnight in vinegar to eliminate its smell.
Step 2 : The next day, wash the offal again and stuff the large intestines with the mixture of ingredients, including pieces of pork fat.
Step 3 : Tie the ends of the intestines and place them in a pot with boiling water, salt, and aromatic herbs.
Step 4 : Cook for half an hour, piercing the intestines with a toothpick to remove air and prevent them from breaking.
Step 5 : Once cooked, slice and serve hot.
