Ingredients

16 Ancho chiles

25 Peppers

2 tablespoons of Sugar

2 Cloves of garlic

2 Large tomatoes, peeled

1 Cold, fried bread roll

1 Onion

1 Sliced plantain

1 Cinnamon stick

Chicken broth

Pork lard

1 pinch of Salt

Preparation

Step 1 : To prepare Mrs. Melita's mole, start by soaking the deveined and seedless chiles in hot water with sugar for an hour.

Step 2 : Then, drain and dry them with a cloth.

Step 3 : Next, heat the lard and fry the chiles, sliced onion, plantain, cinnamon, garlic, and pepper.

Step 4 : Once ready, remove them from the pan.

Step 5 : In the same pan, fry the ground tomato until bubbles form, indicating it's ready.

Step 6 : Then, blend the bread roll (previously soaked in chicken broth) with the rest of the ingredients and strain this mixture over the tomato, stirring constantly to prevent sticking.

Step 7 : Finally, add salt and sugar to taste, and it's ready to enjoy.
