The Mole de Acuyo is a traditional Mexican stew, notable for its blend of intense and aromatic flavors. The combination of chiles, acuyo, zucchinis, and corn creates an exquisite sauce that surprises with every bite. Perfect for a comforting and flavorful meal.
To prepare the Mole de Acuyo, start by boiling the meat and then add the sliced corn.
Next, bring the tomatoes to a boil and blend them together with garlic, onion, green chiles, and eight leaves of acuyo (hierbasanta); this mixture is added to the meat.
In a dough, incorporate a little salt, lard, and two small chopped leaves of acuyo, mix well, and form small balls with a hole in the center. These are added one by one to the pot with the meat.
