Epazote Mole
Ingredients
1 kilogram of Beef
1 kilogram of Pork
1 kilogram of Solid chicken meat
½ kilogram of Tender zucchini, cooked in strips
½ kilogram of Tender lima beans, cleaned and cooked
½ kilogram of Cooked nopalitos, in strips
¼ kilogram of Guajillo chili
100 grams of Chipotle peppers
8 Cooked tender corn, sliced
2 Large onions
2 Garlic cloves
1 Epazote sprig
1 pinch of Salt
Preparation
Step 1 : To prepare the epazote mole, cook the beef and pork in a large pot.
Step 2 : Meanwhile, cook the chicken in another pot with salt and a piece of onion.
Step 3 : In a container with fat, season the ground chili with an onion and two garlic cloves.
Step 4 : Then, mix the cooked meats, the vegetables, and the chili dissolved in a little broth.
Step 5 : Add salt to taste and a sprig of epazote to give the dish its final flavor.
