Authentic Oaxacan Black Mole
Ingredients
1 Large turkey
7 kilograms of Tomato
2 kilograms of Pork lard
1 ½ kilogram of Pork meat
1 kilogram of Dried chilies
1 kilogram of Sesame seeds
1 kilogram of Fried plantain
¼ kilogram of Chocolate
½ kilogram of Peeled walnuts
¼ kilogram of Almonds
¼ kilogram of Fried peanuts
¼ kilogram of Raisins
100 grams of Sugar
15 Small lard bread rolls
10 Green tomatoes
6 Cloves
6 Black peppercorns
4 Avocado leaves
3 Cinnamon sticks
2 Large garlic heads
2 Large onions
1 tablespoon of Cilantro seeds
1 teaspoon of Cumin and thyme
1 teaspoon of Oregano
1 Small piece of nutmeg
1 Small piece of ginger
1 Toasted tortilla
Garlic and onions for boiling the turkey

Preparation
Step 1 : First, the turkey should be cooked in pieces along with garlic and onion.
Step 2 : Meanwhile, it is necessary to devein and toast the chilies (chilhuacle, ancho, black, Mexican pasilla, and chipotle) until well toasted, burn the tortilla, toast the chili seeds, and then wash them.
Step 3 : Next, wash the chilies in hot water and soak them in cold water for 30 minutes.
Step 4 : Then, cut the plantains into pieces, slice the onion, peel the garlic, and fry all together with the bread, sesame seeds, peanuts, almonds, walnuts, and raisins.
Step 5 : On the other hand, boil the sliced tomato together with the tomatillo.
Step 6 : Then, grind the chilies along with all the ingredients and spices, and separately, grind the tomato and tomatillo.
Step 7 : Next, fry the pork in an earthenware pot with enough lard, add the tomato mixture, and cook on low heat for an hour.
Step 8 : Then, add the mole, broth, and turkey meat.
Step 9 : Finally, add the chocolate, sugar, whole avocado leaves, salt to taste, and let it simmer for another hour, stirring occasionally to prevent sticking.
