New Atole
Ingredients
20 Tender cobs
1 kilogram of Tender corn dough
½ kilogram of Sugar
1 tablespoon of Salt
Preparation
Step 1 : The ears are husked and then ground.
Step 2 : The resulting dough is dissolved in a little cold water.
Step 3 : About 10 cups of hot water are added and left to rest.
Step 4 : This step is carried out early in the morning or the night before.
Step 5 : After 6 hours, the water on top of the mixture is removed.
Step 6 : Clean water is added again, then strained and cooked with sugar and salt.
Step 7 : Cook, stirring constantly, until it begins to boil, avoiding over boiling.
