Mexican cuisine is a never-ending array of colors, flavors, and styles.

Among this endless variety of foods, tacos stand out as they were called the symbol of the country in terms of gastronomy.

But, where do tacos come from? Who created them?

Let us tell you a little about the history of tacos:

The word taco comes from Nahuatl, which means "in the middle or half".

The truth is that this recipe is so old that it is based only on assumptions or theories. But there is no doubt that it originated in Mexico.

One of the theories is that Moctezuma (ruler of the Mexican city of Tenochtitlán) used tortillas very similar to tacos as spoons, prepared over hot stones.

The first documented taco feast was during the Spanish conquest. Prepared by Hernán Cortés in Coyoacán for his captains.

Types of tacos:

Having learned a bit about their history, now let's talk about the variations of this historic dish.

The filling, which is usually meat, can be chorizo, grilled beef, chicken, seafood, among others.

They can be:

Golden: Originated in Sinaloa, these are freshly made tortillas filled with shrimp, beef, chicken, potato, or beans. They are usually rolled up and fried.

Basket: Known for their low price and steamed cooking method.

Suadero: A fried tortilla filled with beef, cilantro, and onion.

Placer: Warm tortillas filled with any type of meat or seafood.

Folded: Fried tortillas folded and stuffed with beans, potatoes, and meat.

Stew: Made with typical dishes such as mole, chicharrón, or cochinilla.
